I'm unaware of any sites that sell aftermarket or modded interior pieces for the 3G. You'll want to find a local shop for that or check the Group Buy section. You might try calling your local car stereo shops or upholstery shops (who do automotive) and see if they can help.
Topshopcarbon.com has a few things and has expressed interest at making molds of other pieces.

Ehhhhhh, personally I like hoods and shit, but other than that I think the CF thing is way overplayed. However, like stated above if you have the drive to really do something, you can buy CF sheets and do it yourself just like fiberglass.
