greddy pressure sensor ?

I bought a used e-manage blue and it came with a greddy pressure sensor.

What is the best way : Read the signal from the maf or use the greddy pressure sensor ?

Always the pressure sensor as it can't be overrun.
Yes ! tune the air-fuel and the timing at 10PSI.
You should do as little MAF manipulation as possible. Always try to do direct injector manipulation instead of MAF manipulation and use the MAP sensor for reference.
For me with the e-manage, I used the graph with RPM and BOOST to adjust the injector pulse directly.

At 10PSI the maf can't be overrun ?
Depends, 10 psi doesn't mean shit, it's about how much air flow you are moving at 10 psi. 10 psi on a T25 is WAY less than 10 psi on a GT35R. You can always MAF clamp at a particular voltage if necessary.
